Each file is encrypted, then split into fragments. A single fragment is unreadable noise.

Fragments spread across machines
No machine ever gets enough fragments to rebuild your file, and none of them learn what it is.

Rebuilt when you need it
Only some of the fragments are needed. Machines can go offline and your files still open.
